- 1 kg. octopus;
- olio e.v.o q.b.;
- 2 lemons;
- sale q.b.;
- 1 clove of garlic;
- 1 sprig of parsley.
- Clean the octopus and wash it under running water.
- In a saucepan, add salted water and when the water boils dive octopus.
- Cook for 30 minutes, however, until the fork does not enter (azzicca good).
- When cooked, remove from heat and cut into pieces.
- Meanwhile, in a bowl put the oil, salt, the lemon juice squeezed, chopped garlic, parsley washed, cut into small pieces and whisk with a fork.
- Season with the compound prepared in part previously.
