Octopus salad

The octopus salad for a starter, but also a contour or a second light.


  • 1 kg. octopus;
  • olio e.v.o q.b.;
  • 2 lemons;
  • sale q.b.;
  • 1 clove of garlic;
  • 1 sprig of parsley.


  1. Clean the octopus and wash it under running water.
  2. In a saucepan, add salted water and when the water boils dive octopus.
  3. Cook for 30 minutes, however, until the fork does not enter (azzicca good).
  4. When cooked, remove from heat and cut into pieces.
  5. Meanwhile, in a bowl put the oil, salt, the lemon juice squeezed, chopped garlic, parsley washed, cut into small pieces and whisk with a fork.
  6. Season with the compound prepared in part previously.
