Casarecci norma e pesto

Ingredients for 4 people

  • 400 Article. di bucatini casarecci
  • 750 Article. of tomato sauce
  • 2 melanzane nere
  • 1 jar of basil pesto
  • 1 mozzarella
  • Extra virgin olive q.b.
  • Grated Parmesan cheese to taste
  • Salt and sugar q.b.

Preparation

  1. Cut the eggplant into slices and soak in salted water for 5 minutes and le friggi in olio extra virgin olive oil
  2. A part cook the tomato sauce in a saucepan, adding a pinch of salt and 1 spoonful of sugar to remove the acidity of the tomato
