Casarecci the standard e pesto
Ingredients for 4 people
- 400 Article. di bucatini casarecci
- 750 Article. of tomato sauce
- 2 melanzane nere
- 1 jar of basil pesto
- 1 mozzarella
- Extra virgin olive q.b.
- Grated Parmesan cheese to taste
- Salt and sugar q.b.
- Cut the eggplant into slices and soak in salted water for 5 minutes and le friggi in olio extra virgin olive oil
- A part cook the tomato sauce in a saucepan, adding a pinch of salt and 1 spoonful of sugar to remove the acidity of the tomato
- Meanwhile cook the pASTA casareccia and drains to the tooth. After draining into the pot add the tomato, pesto,the mozzarella into small pieces and mix everything.
- Put the pasta in the pot and add the eggplant, then sprinkle with Parmesan snow
